The “From” part is configurable per specification, it’s called identities. Good email clients will have config options for that.

I maintain that close to you geographically is better, so I use the services provided by my country’s metereological institute. They also provide human friendly data (much more than the web ui) as json or xml, and I scripted a little app around that. It’s not hard.

Yes, it’s better to use a phone OS and/or phone hardware that does not do that, or can be relied on that off means off. And yes, even then it’s still possible that firmware blobs do nefarious things.
