Probably cues and calming. The more natural an interviewee feels, the better they’ll perform. “Great to see you” and its variations are probably popular. “It was fantastic having you” equally so
You sure it’s not “we know where your family lives” and “there’s a lot riding on this?”
Too tired to look up the specifics on YouTube now, but several shows have clips there that show what happens during breaks or after. Usually small talk with the interviewee and some banter with the audience.
As I don’t watch the interview part of any show, or don’t watch talk shows that aren’t satire, I usually watch the banter clips from e.g. The Daily Show (there are some great ones with Trevor Noah) or whatever what Seth Meyers show is called.
